Over the past two decades, we've been told to avoid eating eggs as they're high in cholesterol. Recently, guidelines have been revised to allow up to three eggs per week.
Actually, your body needs cholesterol to be healthy. Everything we read indicates lowering cholesterol doesn't eliminate the real problem, but that's a whole topic in itself and will be covered in the future. Eggs are a natural food source and contain high amounts of lecithin which emulsifies cholesterol. Article after article on health lists eggs as being beneficial, so when will nutritional guidelines finally catch up.
My husband subscribes to several alternative health publications, and has read over and over that you don't need to limit your egg consumption. He eats eggs for breakfast as well as for lunch, and we basically follow a high protein diet overall. From his twenties, he has had high blood pressure and raised cholesterol levels, but since changing to a high protein diet and eating eggs, his blood pressure and cholesterol levels are now normal. His HDL (good cholesterol) level has risen, and LDL (supposed bad cholesterol) level has lowered. He takes no medication, which is almost unheard of for a man 54 years old in the US.
We also read about a man in another country who was taken captive by terrorist guerrillas for several months and was fed only eggs and water the entire time. When he was rescued, his weight had normalized, and blood pressure and cholesterol levels were normal as well.
I do want to mention that because eggs are high in fat, it's important for weight maintenance to avoid eating the high glycemic carbohydrates such as potatoes, bread, and sugar.
